Fresh Corn Tortillas

A Sevy's Basics recipe on how to make fresh corn tortillas using nixtamalized corn flour. It is simple and delicous and can be the base of your quesadillas, tacos, enchiladas or even your very own totops. Now let's just make them

Equipment

  • 2 Cutting Board
  • 1 Zip Lock Bag
  • 1 Mixing Bowl
  • 1 Tea Towel
  • 1 Container for your water

Ingredients

  • 200 Grams Corn Flour Nixtamalized
  • 300 ml Water
  • 1 pinch Salt

Instructions

  • Add the corn flour to the mixing bowl
  • Add the salt and start mixing it in
  • Slowly add the water whilst mixing it with your hand
  • Mix togheter until a dough is formed
  • Dunk this onto your work surface and roll into a ball
  • Put the ball of dough back in the mixing bowl
  • Cover with a tea towel and set to rest in the fridge for 30/45 minutes
  • Take out the ball of dough out of the fridge and place on the work surface
  • Cut into 16 equal pieces
  • Roll balls from the 16 pieces
  • Place a ziplock bag on one of the two cutting boards andmake sure it is cut open on two extra sides
  • Place one of the balls of dough in the ziplock bag
  • Now use the other cutting board to press down on the ball until you have a thin tortilla
  • pre-heat your Pan on medium high heat
  • Bake the tortilla on both sides until done
  • Than place in a clean tea towel or a tortilla warmer
  • You can also make more tortillas at once so that you can make the amount that fit in your pan at once
  • Repeat the tortilla forming and baking process until you run out of dough balls

Notes

Tortillas are the base of so many things in Mexican cuising, from quesadillas, enchiladas, to just being used as dipping utensils or for the perfect taco. It is important that they are served warm otherwise they can become a bit stale pretty quick. You can off course always re-heat them. 
In the making of the tortillas you might experience that they can rip pretty easily, don't get frustrated, you can just form the ripped tortilla into a ball again and try again. Pratice makes perfect they say!
