Sandwich spread
Nothing beats a simple sandwich spread, nothing as comforting, nostalgic, and honest. Maybe it’s not truly Limburgish, maybe it was dreamt up by some famous ketchup company in the 80s or 90s, but it takes me back, back to the days I left behind sugar-fueled Nutella crazes and discovered a taste for something sharper, more sour, more real. I didn’t switch because it was healthier, not because it had less sugar, simply because my taste buds changed.
This spread is what we had at home, a creamy yoghurt base with pickles that I loved as a kid. My version carries some extra notes I’ve picked up along the way, and you’ll discover them once you start making it. It’s simple, honest, and perfect for any sandwich. A little dill, a mini cucumber, some homemade pickles and their juice, Greek yoghurt, curry powder, a pinch of sugar, salt and pepper. Chop it, mix it, and ét voila, a sandwich spread that carries you straight back to Limburg, school lunches, fishing afternoons in the park, and every memory in between.
Sandwich Spread
Equipment
- 1 Medium mixing bowl
- 1 Sharp knife
- 1 Chopping board
- 1 Spoon or spatula for mixing
- Airtight container for storing
Ingredients
- 500 ml Greek yoghurt
- 1 bunch fresh dill chopped (about 2–3 tablespoons chopped)
- 1 mini cucumber finely diced
- 3 small pickles cornichons or homemade, finely diced
- 2 tbsp pickle juice from the jar or homemade
- 1 tsp curry powder
- 1 tsp sugar
- Salt and freshly ground black pepper to taste
Instructions
- Start by finely chopping your dill, cucumber, and pickles, just like you did as a kid when you helped in the kitchen. Keep it rustic, nothing too precise, it’s all about the memories.
- Toss them into a medium bowl, add the pickle juice, and give it a quick stir. Let the flavors start to mingle.
- Spoon in the Greek yoghurt, sprinkle in the curry powder, sugar, and a pinch of salt and pepper. Mix everything together until smooth and creamy, tasting as you go. Adjust seasoning if you like a little more tang or sweetness.
- Transfer your spread to an airtight container and let it sit for at least 30 minutes if you can, so the flavors settle and harmonize.
- Slather it on fresh bread, pile on your favorite toppings, and enjoy a sandwich that carries you straight back to Limburg, school lunches, and lazy afternoons in the park.
