Broccoli Soup like my mom used to make it
Some dishes stay with you for life.
For me, broccoli soup is one of them. Whenever my mother decided that we had eaten enough unhealthy food, she would move towards lighter meals and broccoli soup was a regular on the menu. At the time, I didn’t realise it, but those bowls of green comfort quietly became part of my culinary DNA.
Strangely enough, I loved it back then.And I still absolutely love it today.
This soup is comforting without being heavy, simple but deeply satisfying. It’s the kind of food that makes your day a little better without asking much in return. No fuss, no show, just honest flavour.
It’s perfect in the days leading up to Christmas when things start to get busy, or just as perfect after the holidays when you crave something lighter again. Serve it as a starter, a light lunch, or build around it: leftover gravlax and rye bread, toasted baguette with herb butter, or whatever happens to be in your kitchen.

Broccoli Soup
Ingredients
- 2 onions diced
- 2 cloves of garlic finely chopped
- 2 heads of broccoli roughly chopped
- 500 ml chicken stock or vegetable stock
- 750 ml water
- Salt and black pepper to taste
- Crème fraîche to taste
- White balsamic vinegar to taste
- Crème fraîche optional
- Fried onions optional
Instructions
- Heat a little oil or butter in a large pot over medium heat.
- Add the diced onions and sauté gently until soft and translucent.
- Add the garlic and cook for another minute, without letting it brown.
- Add the broccoli and sauté briefly so the vegetables get a bit of flavour.
- Deglaze with the chicken or vegetable stock.
- Add the water, bring to a boil, then let simmer for about 10 minutes, until the broccoli is tender.
- Blend the soup until smooth.
- Stir in crème fraîche to taste, then balance with a splash of white balsamic vinegar.
- Season with salt and pepper.
- Serve hot, garnished with a spoon of crème fraîche and a handful of fried onions.
